\nYugo Taniwaki, owner and chef of “Xativa,” a Spanish restaurant that has been in Nijo Kiyamachi for 10 years, is also a Kyoto Yamashiro customer.<\/p>\n

\nKyoto still retains its dashi culture, and perhaps the taste of dashi has been ingrained in its body and soul since childhood.
\nEven in Spanish cuisine across the border, I quickly learned the importance of dashi.<\/p>\n
